I think most hostels are still keeping it pretty simple. Maybe a games room with a pool table. Some hostels have video games like Wii, but I've never been to a hostel where people were playing the video games. A problem with video games is that only a couple of people can play at once, and it would probably be boring for everyone else to watch. :)
I think better than video games are things like: a couple of hostel guitars, cards and poker chips, multi-player board games and dudo...
If you want to avoid the possible liability problems with gym equipment, one idea is to make an agreement with a local gym to send guests there with a big discount.
Some hostels have swimming pools.
The media often focuses on "boutique hostels" and unusual facilities, but I think most of the best hostels still keep it simple -- dorms, good common areas, activities, and a great staff.
