I like the idea. Are you thinking that it would actually be the size of a table, or more like a fold-down shelf? Just make sure it's securely fastened to the wall so it doesn't drop down on someone in the middle of the night.

I've been thinking about adding a small articulated table to each of the beds. This table would be attached to the wall and can be opened, like an airplane table, over the bed to help the backpacker use the laptop, read a book or write a letter or its notebook.
What do you think about it? Do you think it's useful? Would I keep my guests for too long inside the bedroom? (Add to the fact that the beds already have curtains).

I like the idea but i'm quite against using folding tables in a hostel. The hinge will be broken and screws loosen easily, when guests keep pushing some weight on top of it.
When it's broken and you don't have staff to check and maintain them quickly enough, guests will complain.
If you can avoid it, then yes, it's always great to have more added facilities.
