well, again, it depends on what you're providing - bulk cereals, bread and spreads are cheap as chips (figure about $.50 a kilo for muesli) and most people dont actually eat THAT much. its a fine balance; on one hand providing good food that everyone wants and crappy food thats cheap and people wont steal for the rest of the day. most people will have a bowl of cereal and a couple of bits of toast, a coffee and a juice which if you're buying in bulk amounts to about $1 per person.
of course if you're adding meat, eggs, cheese etc then yeah, you're prices rise dramatically - i havent seen any hostel that provides that sort of breakfast without charging a bit extra (not to say they dont exist, only that i havent seen any).
and yes, a free breakfast is often a big seller - thats one less meal people have to pay for, which in a cafe or something will cost $5 at least. like many things its difficult to quantify how many people come 'for' the breakfast but peopel will certainly rate a good free feed highly, boosting your ratings and, well, we all know how it works from there!
