In the begining

Hello my name is Kári and i am from Iceland but living in denmark
I am working on my dream wich is opening a hostel in mexico (chiapas).
But I dont know how to start the project i realy whant to get started now...
I am thinking about going to the ambassy after 2 weeks to get info about taxes and imagration laws (that is some kind of a start?)
If some one could give me some tips that would be priceless
