I switched to not including tax recently for the same reason (if you include tax then HW and Booking.com get more money because they get commission on the tax as well). No problems so far. You can put a disclaimer about the tax in your property description and in your booking confirmation emails. If they miss it and get upset, well sorry but it's common practice here in Canada to add tax on at the end, and it's in the booking emails so don't say you didn't know. So far though, like I said, no problems.
