Maria, as far as I can recall, no hotels are converting to 'hostels', but you will see some hotels offering 'dorm rooms'. They will put bunkbeds in a room, and you have to book the entire room. Then I have heard some saying if they put any one else in that room, they will refund you the nights those people were in that room. That is what I heard, but no idea if it is true or not.
Personally, until tourism really picks up again in LV, and the hotels start increasing their rates, I would avoid doing a hostel there. You can stay in some of the cheap downtown hotels for $30-$40 a night. Your only chance of making any money is during the summer weekends, and the few conventions that come up. That's it.
Over the years, I've seen a few hostels come and go, and there are only two that have persisted through the years, and that's Sin City and Las Vegas Hostel (formally USA Las Vegas). Even then, they are not making huge amounts of money.
If you have a motel/hotel already, you would probably be best making it into a longterm residential place. Even then, it's seasonal. So much competition from other motels, and hotels.
