As much as I love dogs and would like to have one in my hostel, it just isn't a good idea. You already mentioned that they crap on the patio and bark all night, which annoys guests. The fact alone that you have complaints from guests is enough reason to find another place for the dogs to live. In addition to that, dogs can carry any number of insects into the hostel, and they can smell quite offensively if not bathed on a regular basis. Plus, many of your guests may have allergies or a fear of dogs, which would make your hostel an uncomfortable place for them to stay.
The Possonium Hostel in Bratislava has a bulldog that looks like it was put together from spare parts that don't quite fit together. It's so ugly it's cute. The poor thing snorted and farted and made all kinds of amusing noises to entertain the guests, but it also jumped up on the beds, drooled all over the floor, chewed on things it found lying around, and tried to hump every leg it could find. If you decide to keep the dogs in your hostel I hope they'll at least be better suited for the environment.
