A generic domain name may help a little bit with SEO, but it won't do anything to build a brand. Just look at amazon.com and books.com or google.com and search.com which is the bigger business?
You're better off with a domain name that has the name of your business in it. If you're going for a generic domain, then one with the name of your town/city is better than one with the name of your country. I think the average person looking for a hostel in Cordoba will do a Google search "hostel Cordoba" and not "hostel spain".
