The location would certainly be convenient for everyone arriving and departing Crete, especially if the transportation runs at odd hours and they need a place to layover. I have been to Crete once, but I can’t say that I am familiar with the geography or the local attractions. Are there interesting things to do in that area too, or are most of the guests likely to want to spend their time at the beaches and other places of interest? Are you likely to end up with lots of 1-night stays from guests in transit, or are there plenty of things around there to keep them entertained?
As far as the noise goes, this may pose a problem. If they can’t sleep well, then guests will be unhappy no matter how convenient the location is. Will the guest rooms face out onto the street? Is it possible to install any kind of phonic insulation? For example, double pane windows with a decent rubber seal around the edges might help a lot. To a very small extent, curtains may reduce some noise transfer as well.
Putting soft, absorbent materials in the rooms will also help to prevent noise from bouncing around inside the hostel. The mattresses and bedding will already help this. Carpet or soft furniture can also help, but they may not be practical if your guests come back from the beach with lots of sand all over them. You could hang artwork on the walls and hide foam behind the frames so prevent echo as well.
