How big is the hostel? If you have enough rooms, you could make a "interesting guests" room. At one hostel, we had one for men and one for women. Some people actually preferred those rooms. Regular backpackers didn't get put in those rooms unless everything else was booked.
Or if you have an empty dorm, you could separate the person into their own room for the night, and then not extend them the next day.
If you have a sign on the website that lists requirements something like "passport and out-of-state, government-issued photo ID required", you can refuse to check them in based on that, even if they have a booking. We had to make a lot of requirements like that in the city hostels I worked in.
