I just wondering, may be somebody tried to do it.
I'm going to move my hostel from one building to another one within the one town.
Does Booking will allow me to do it? Hostelworld? (Airbnb I guess no?)
I'm aware of the fact that it could mislead hostel guests since before they leaved reviews about one place and then about other one.
But when someone sell hostel with booking/hostelworld pages, does changing an owner makes not even more difference compared to changing the building?

I have never personally moved my hostel from one location to another, but other hostels certainly do this. The booking sites won't prohibit you from changing the address. They will definitely want updated information, photos, descriptions, directions, etc. It is possible that they may remove your previous reviews and make you start over as if it were a new hostel, but that's not always the case.
