General practice for our area that most accomodations use is 20 hours or so per week of 'unpaid' work in exchange for free accomodation and food. After this its approx $10 per hour for any additional hours worked.
This would really vary greatly though on where you are located, living costs of the area etc.
Depends on how many staff you have on and the size of the hostel, but I would say everything (if it is a smallish hostel). Although I wouldnt count 'socialising' as working hours. It's just a job requirement - any time out in communal areas = be very friendlyand chatty to guests. regardless if on or off duty.
