we brought it in after a girl went nuts at me one morning about our price not including breakfast when others did. we thought we weren't allowed to (not having separate commercial kitchen) but found out we could do it 'continental' style (ie: no preparation by us) and once we started providing breakfast food it became fairly popular.
We used to provide cereal, milk, fresh bread from bakery across the road (started with croissants but that got too expensive), condiments and juice. tea/coffee were already free. We'd had to bring in free milk anyway to stop people stealing ours/other guests.
we charged 2 pound. It was help yourself/honour payment  and all you can eat.
i think it's a nice option - if you turn up late somewhere and only have the leftover pasta shells in your backpack & nothing else it's useful! It can be a bit dodgy if there's not enough food to go round or if they police the amount you take (although at the same time we had people take extra and squirrel it away in their backpacks for the next stop, which pissed us off)
it is true that it can help marketing wise to get potential guests distinguishing between you and the guy up the road.
